What does a Vegan eat in a day?

What I eat in a day as a Vegan!

Meet Mairead – one of our wonderful retail team members

Mairead joined the Nurcha team early last year after moving to the Sunshine Coast for a lifestyle change. She has been vegetarian for over a decade and a proud vegan for five years.

She was inspired to make the plant-based change after befriending a baby calf ‘Panda’ on her family’s hobby farm. While she initially went vegan for the animals, she now says that the environmental impact plays a strong role in her choices.

In honour of Veganuary, we asked Mairead to give us a day on the plate of a typical vegan lifestyle to inspire others to help change the world, one meal at a time.


BREAKFAST

Matcha Latte & Avocado Toast

It might seem strange to many, but I have never been a coffee drinker. Instead, I prefer to start my day with a matcha latte, which gives me the energy I need to get out of bed and make the most of this wonderful summer sunshine. I like to get out first thing and go for an early morning beach walk; I find the fresh sea breeze puts me in the right headspace to handle a busy day at work.

But the most important part of my morning routine is starting my day with a healthy, balanced breakfast. My favourite way to do this is with the classic millennial staple: smashed avo on toast!

MORNING TEA

 

A Protein Bar

When most people reach for that mid-morning caffeine boost, I reach for a morning snack. If I have the time I like to make bliss balls from scratch but more often than not, I’m running out of the door with a mouthful of Blue Dinosaur to get me through until lunchtime.

LUNCH

Loaded Vegan Nachos

If I’m at work (regardless of whether or not I’m rostered on) I can never go past the Nurcha Nachos. A delicious blend of mushrooms, beans and spices stacked over gluten-free corn chips and loaded with fresh guacamole, sour cream and crunchy slaw. Tie your hair back and get your hands dirty because this is what dreams are made of.

ARVO SNACK

Tea & Chocolate

A little afternoon pick-me-up is essential to get me through the day. I find that my brain power starts to fade around 3pm so nothing makes me happier (or more productive) than a cup of English Breakfast with a little Banjo Bear on the side.

DINNER

Veggie Stir Fry

My favourite meal of the day – there is nothing I love more than a home-cooked meal. The easiest way to get my daily dose of nutrients is with a veggie-packed stir fry. Simply, fry off some tofu with market-fresh vegetables in tamari sauce, then serve over brown rice and drown in satay sauce. I also like to keep my freezer stocked with Nurcha Kitchen at-home meals for those days when I’m too exhausted to cook. That way, instead of swinging past a drive-through or ordering takeaway, I know that I’m still nourishing my body with real, wholesome ingredients. This way I know that my body will always get the nourishment it deserves and not a chopping board in sight!

DESSERT

More Chocolate

If you haven’t noticed already, I have a crazy sweet tooth. Since I was a child, I have always been adamant that dessert belongs in a separate stomach. Therefore, I finish every day with something sweet.

My perfect day of eating will always end with a creamy hot chocolate and a Loco Love bar. The caramel butter pecan is my favourite – a little taste of heaven – but shhh, don’t let everyone know or there will be none left me!


There you have it – a day on the plate of an everyday vegan! We hope this shows that eating a vegan diet can be just as easy and equally, if not even more, delicious.
